What is summer with Egg Salad?  This recipe goes perfect on Udi's Sandwich Bread!

At a glance
  • 6 eggs
  • 1 Tablespoon real mayonnaise or Vegenaise
  • ½ Tablespoon gf Dijon mustard* (regular if that’s what you have)
  • ¼ teaspoon onion powder
  • Salt and course black pepper to taste


In a medium saucepan, run cold water over the eggs.  Bring to a rapid boil, then turn off the heat and leave the eggs for 5 minutes.  Drain hot water, then let the eggs sit in cool water until cooled.

Chop eggs to desired size and stir in mayonnaise, mustard, onion powder and a little salt and pepper. Taste it, add salt and pepper little by little, until your desired flavor is achieved.
